Quality, reliability and safety of the product supplied, substantial and significant prerogatives for a company that produces bread, thus become the fundamental and indispensable requirement in a perspective of constant research into the high quality of the food product, processed and baked according to the most rigorous principles of the best artisan tradition.
With this in mind, certification to the international FSSC 22000 standard and certain production and process choices, such as:
- extensive experimentation and careful research into flavours
- careful and strict selection of raw materials and ingredients of absolute genuineness and freshness
- absence of food additives and ingredients of transgenic (GMO) derivation
- use of 100% extra virgin olive oil of extraordinary quality from renowned cultivars
- manual stretching of the dough
- long yeast method
- total quality assurance system through a rigorous procedure of incoming, in-process and final controls.
