Sea Bass Cheviche and Bibanesi Olives

A complete menu to entertain your guests.

Ingredients for 4 persons:

  • Bibanesi Olives to taste
  • 400 g sea bass, previously flash frozen
  • 1 small red onion
  • 2 limes
  • 100 g red pepper
  • 1 hot chilli pepper
  • Extra virgin olive oil to taste
  • Edible flowers to taste
  • Coriander to taste

Prepare the marinade by mixing the lime juice, olive oil, chopped chilli pepper, salt and pepper.

Cut the fish into thin slices and arrange them on a serving plate. Pour the marinade over the fish, cover with foil and leave to marinate in the fridge for at least one hour. Cut the pepper into cubes and the onion into rings and arrange them on the ceviche, adding the chopped coriander.

Plate the cheviche, decorating it with coriander leaves and edible flowers. Serve together with the Bibanesi Olives.
